At the winery, fully restored Rothschild in 1989, installed pneumatic presses that help a thorough treatment of the fruit. In winemaking used small barrels so that each vintage can be individually controlled and evaluate it. Before aging wines undergo a rigorous selection, selected as the \"Grand Vin\" ripen up to 26 months in oak barrels, of which about half is updated every year. If the quality does not match, the wine is classified as a second - \"Carmen de Rёssek\", named after the first owners - Karm de Langon monks. Chateau also produces wine \"Clos Laber\" and \"Chateau de Cos,\" as well as a dry white wine \"R de Rieussec\", made from grapes nebotritizirovannogo and consisting of roughly equal proportions of the varieties Semillon and Sauvignon Blanc. A century on, their vineyards have grown to some 450 acres in McLaren Vale, including Shiraz dating back to d'Arenberg's first plantings in 1912, and nearly one-third of McLaren Vale's old bush-vine Grenache. Fourth generation winemaker, Chester Osborn, recently converted all of the family's vineyards to organics and biodynamics and moved to solar energy in the winery. All the while, in terms of winemaking, not much has changed--all the wines are basket-pressed, the reds foot-trodden during fermentation; everything is done in small batches, leading to an impressive array of bottlings every year, each showing a different facet of McLaren Vale terroir. From a confidential production, only 13,000 bottles are available each year. Two cuvées are produced by Audrey and Jean-Claude Vidal: a red Châteauneuf-du-Pape vinified according to ancestral methods and a white Châteauneuf-du-Pape whose production does not exceed 2,000 bottles. The vines are old, they produce low yields but of high quality. The average age of the vineyard is 70 years, the old vines are regularly replaced by new plans while respecting the original complantation. The vineyard is managed with respect for nature thanks to the use of organic composts.
