The family moved to Champagne from the Beaujolais in the 15th century and worked in the vineyards before establishing a Champagne house in the early 1800s. Crushed rocks, lemon peel, white pepper, slate and sage confer vibrant intensity. Clean, bracing, and refreshing, the Blanc de Blancs is beautifully done. This release is perhaps a touch slender, but I admire its energy. Time in the glass brings out a lovely texture to round things out. Dosage is 2gr\/L.
