It also happens to be the closer to the sea than any other site, providing salty sea air for these ungrafted, head-trained vines to flourish. The vineyard is planted on extremely steep limestone slopes, with a soil featuring a higher pH level to enhance acidity. Upon harvest the grapes are fermented with natural yeasts, then aged in 80% used oak barriques, in which 80% are French oak and 20% are American oak. The wine is bottled after being aged for 15 months in barrel. \u003c\/p\u003e\n\u003cp\u003eAromatically this wine is full of ripe dark fruits and enticing minerality.
